Sweet Potato Protein Oat Crunch Cookies

Drizzled in vegan chocolate, these cookies are made with a shockingly healthy ingredient. Sweet potato! This root vegetable makes for a soft, gooey cookie and a crumbly base, with the oat flour providing that well needed crunch. Just 108 kcals per piece with 6.2g of protein, these ingredients make 12 cookies and only takes 20 minutes to make.

Ingredients

1 1/2 cups rolled oats (blended)

1/2 tsp baking powder

2 tsp ground cinnamon

1/3 cup maple syrup / Manuka honey

1 egg

1/3 cup sweet potato puree

2 tablespoons oat milk

vegan nomo dark chocolate (optional to drizzle)

3 scoops whey protein


Method

  1. preheat the oven to 350 degrees Fahrenheit, and line a baking tray with parchment paper.

  2. combine the oats, baking powder and cinamon in a blender. pour the flour like mixture into a mixing bowl.

  3. add the egg, sweet potato puree, maple syrup and milk to this bowl and mix until well combined.

  4. once the dough is mixed well, start spooning scoops of the mixture onto the parchment paper. slightly flatten the ball shaped mixture pieces with the back of a spoon, and put in the oven for ten minutes.

  5. check the cookies are done by stabbing them with a skewer, and checking for excess uncooked mixture. If the skewer comes out clean, remove the cookies from the oven, and leave to cool for ten minutes.

  6. If you choose to, drizzle some melted vegan chocolate or dark chocolate over the cookies, and leave for an extra 10 mins to set.

  7. Once cooled, plate up, serve and enjoy!
