Sweet Potato Choc Chip Cookies




Makes: 12 cookies

Takes: 30 - 35 minutes

82 kcal per cookie. 2g protein.


Ingredients.

  • 1 medium sweet potato mashed

  • 1 cup oat flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 cup vegan butter 

  • 1/4 cup coconut sugar

  • 1 egg

  • 1 tsp vanilla extract

can add chocolate chips


Method.

  1. Preheat the oven to 170 degrees and line a baking tray with parchment paper. Combine all dry ingredients into a bowl, and mix.

  2. Once mixed, add all of the wet ingredients (assuring that the sweet potato once cooked is now at room temperature) and mix. 

  3. section the mixture into 12 balls, and place onto a baking tray. flatten with the back of a spoon, and put them into the oven. (make sure they're pretty much as flat as you want them to be when they come out, as the cookies stay in this shape!)

  4. Bake for 10-12 minutes, until the cookies golden on the outside. (don’t over-bake!) These cookies should be soft in the centre. 

  5. Remove from the oven, and leave to cool. After 10 minutes, plate up and enjoy!
