Ingredients
4 bananas, mashed
1 large egg
1 tsp vanilla extract
1/2 cup coconut sugar (or 1/3 cup honey / maple syrup)
1tsp ground cinamon
1 tsp baking powder
1 cup oat flour
1/2 cup whey protein powder (or protein powder of your choice) 2 tbsp melted vegan violife olive oil butter (or applesauce)
Method
preheat your oven to 350F and grease a loaf pan, then line it with parchment paper.
mash bananas in a mixing bowl with a fork. then add the egg, vanilla, coconut sugar and cinamon. stir well until combined.
in another bowl, stir together oat flour, protein powder, salt and baking powder. then combine both mixtures, mixing until smooth.
then, gently stir the vegan butter into this mixture. bake at 350F for 35-45 minutes, or until a skewer can be inserted into the loaf and come out clean of excess.
Allow to cool for 5 minutes, then slice and serve.
