It's pumpkin spice season all year round with this overnight pumpkin spice and chia seed protein oats recipe! Packed with 8.9g of fibre and an impressive 30.7g of protein, this breakfast would be a great, nutritious start to your day. Takes only 10 minutes to make; and the magic happens overnight.

Ingredients
1/3 cup (85g) plain Greek yogurt
1/2 cup rolled oats
2/3 cup unsweetened milk of choice (i used oat milk)
1 tablespoon chia seeds or ground flax meal (i used milled flax seeds)
1/2 teaspoon vanilla extract
0–2 tablespoons honey or maple syrup (depending on your preferred sweetness, i used 2😉)
1/2 cup plain pumpkin puree (i made this from scratch but you can buy in the store if that’s easier)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 scoop whey protein powder (i used my protein) this is optional.
Method
1. Whisk together all ingredients in a mixing bowl. Spoon into a jar with a tight-fitting lid.
2. Close and refrigerate for at least 4 hours, but preferably overnight.
if you wish to make the pumpkin purée from scratch, just get a medium / small size pumpkin (small is actually better), cut in half but not the stalk as it’s too thick, and place face down on parchment onto a baking tray. cook at 400 degrees farenheit for 50 minutes, no oil or greasing needed. remove once it’s soft and ready to scoop into a bowl, and it’s done!
