Garlic, Tomato, Prawn and Zuchini Noodles

This is one of my all-time favourite meals for those cold autumn and winter months. If you looove packet noodles, consider this recipe a tasty upgrade! This one-pan dish takes only 25 minutes, is only 478 calories with a whopping 36.5g of protein.

Ingredients

2 courgettes (spiralized into zuccini)

3 cups of chopped cherry tomatoes

3 cloves of garlic, crushed

1 packet of coldwater prawns

50g grated halloumi (or cheese of choice) 1 pack Amoy thread fine noodles

1 tsp olive oil


Method

  1. start by washing all of your vegetables. Then, spiralize your courgettes. if you don't have a spiralizer, I recommend chopping, then dicing your courgette for this dish.

  2. set this zuccini aside, and start chopping your cherry tomatoes in half. put them to the side in another bowl too, and prepare another bowl to grate your halloumi into.

  3. set this final bowl aside, before peeling your garlic cloves. crush your garlic into a large frying pan, and add the tsp of olive oil. then, put the pan on medium heat and leave to simmer for 2 minutes.

  4. once the garlic becomes fragrant, add the chopped tomatoes, and crush them slightly in the pan with a spatula, mixing them in with the garlic.

  5. leave this for 4 minutes to cook on a low heat. then, add your zuccini to the pan. mix the tomatoes and zuccini in together well, and leave on this low heat for 5-10 minutes until the zuccini wilts down slightly.

  6. then, add your noodle packet, your coldwater prawns, 25g of the grated halloumi and mix. leave this to simmer on low for another 5 minutes.

  7. once the tomatoes and zuccini are cooked through and the prawns have browned and shrunk, remove the pan from the heat and plate up. enjoy!
