10 Minute Lemon Drizzle Cake

Ingredients.

  • 1½ tablespoons vegan butter

  • 2 tablespoons coconut sugar

  • 1/4 teaspoon vanilla

  • 3 tablespoons soy milk

  • 1/4 cup oat flour

  • 1/4 teaspoon baking powder

  • 1 tsp lemon juice

  • 2 tablespoons zested lemon


Makes: 1

Takes: 10 mins

Method.

  1. Add all ingredients to a bowl and mix. If you’d like a thicker texture, stop at this point. If you want your batter to be super smooth, use an electric whisk to mix or 2 minutes. 

  2. Once all ingredients have combined, put into microwave for 1-1/2 mins. 

  3. add toppings (lemon shavings, greek yogurt and honey etc)


(if you’d like yours baked, put it into the microwave for 3 and a 1/2 minutes).
