Ingredients.
1½ tablespoons vegan butter
2 tablespoons coconut sugar
1/4 teaspoon vanilla
3 tablespoons soy milk
1/4 cup oat flour
1/4 teaspoon baking powder
1 tsp lemon juice
2 tablespoons zested lemon

Method.
Add all ingredients to a bowl and mix. If you’d like a thicker texture, stop at this point. If you want your batter to be super smooth, use an electric whisk to mix or 2 minutes.
Once all ingredients have combined, put into microwave for 1-1/2 mins.
add toppings (lemon shavings, greek yogurt and honey etc)
(if you’d like yours baked, put it into the microwave for 3 and a 1/2 minutes).
